|  | Basic Function The PD Fellow will work on a project funded by DAFM with the objective of developing strategies to assist the Irish meat industry produce targeted meat products in consideration of nutritional and other food-related challenges faced by older adults. The Fellow will specifically focus on methods to enhance the texture and flavour attributes of processed meat products through optimising processing strategies and formulations. Packaging of ready-to heat products for older people will also be investigated. Duties & Responsibilities specific to this project: •Review the literature on the determinants of functional food acceptance in older groups. •Design and manage experiments and perform statistical analysis of experimental data •Enhance the texture and flavour attributes of processed meat products for older adults using optimised processing strategies and formulations.
